Bite-size chicken, tender onion, and softly cooked egg are layered and simmered together in a sweet-salty sauce made with dashi, soy sauce, and mirin and served on a bed of steamed rice. The contrast of textures and flavors makes you craving for more bites.

Ingredients
- 100g Boneless Chicken Thigh
- 1 Small Onion
- 2 Eggs
- 1 Bowl of Steamed Rice
- 1 tbsp Mirin
- 1 tbsp Soy Sauce
- 1 tsp Sugar
- 1/2 cup Chicken Stock
Instructions

1. Combine chicken, soy sauce, mirin, and sugar in a bowl. Then set aside for 10-15 minutes.

2. In another bowl, crack the eggs and beat them slightly.

3. Heat a small pan over medium heat. Then add the chicken stock and onion slices. Cook until the onion is slightly softened.

4. Add the chicken and cook until just done (about 5 minutes).

5. Pour the beaten eggs in a circular motion over the chicken and let them cook until slightly runny in the center.

6. Slide the cooked mixture directly over a bowl of hot rice.
